There is nothing wrong with an easy recipe. It certainly does not mean that the results will be poor. Once again, at a pot luck dinner, this potato recipe was brought and it instantly became a big hit. I, of course, got the recipe. I have seen many versions of this recipe and you may already have one, but this column may remind you to make it again since it goes with almost any meat and is just delicious.

I will have a hard time going on and on about the techniques involved or the ingredients since both are so simple. This is a dish you can make right before it goes in the oven since it only takes a few minutes. You could substitute a different cheese if you like, but I have always used sharp cheddar.

The corn flake topping is optional and you can use less if desired. I have made it with and without it depending on my mood! I have also just sprinkled french fried onion topping during the last 30 minutes which gives a nice flavor and a bit of a crunch.

It may be easy to make these potatoes, but it will be hard not to eat them all!

Easy Scalloped Potatoes

30 oz bag frozen hash brown potatoes, shredded variety

1 can cream of chicken soup

12 oz sharp cheese, grated

8 oz sour cream

½ cup onion, chopped finely

¼ cup butter, melted

2 cups corn flakes

Salt and pepper

Spray a 3 quart (9 x 13) baking dish with non stick cooking spray. Line the bottom of the pan with the frozen potatoes, spreading evenly. Mix the soup, cheese, sour cream and onion together in a small bowl and pour over the potatoes. Sprinkle with salt and pepper. Mix the corn flakes with the melted butter and sprinkle over the top of the potato mixture. Bake at 350 for 1 hour until potato mixture is hot and bubbly and corn topping is brown.

Serves many. This would be an easy dish to cut in half and you could use an 8 x 8 baking dish.
