Yeah! Mangoes are starting to appear in the grocery stores again. There is nothing else that tastes quite the same and when they are good, they are very very good.. But, they are always a bit of a mystery until you slice into them. Good luck!
The pork chops in this recipe are delicious and I make them all year. But, the side of the mango salsa is the best part of this combo. I marinate the pork all day and I also put the plastic bag in a sealed container since it is very fragrant and I do not like the refrigerator smelling like garlic. I prefer the boneless chops and trim any excess fat from the edges. The chops are easy to grill and they only take a few minutes on each side depending on the thickness.
I have the recipe for the mango salsa, but you can adjust the ingredients to taste. If you want more onion, just add it. I don't think you can hurt this since it is just fresh fruit and vegetables blended with lime juice. I made this last week and it occurred to me that some fresh jalapeno pepper would also be a nice addition. Another great idea would be to use fresh pineapple and grill it first. This will sit in the refrigerator for several hours before serving for optimum crunch.

Pork Chops with Mango Salsa
1/3 cup pineapple juice – this can come from the pineapple needed for the salsa
1/3 cup low sodium soy sauce
¼ cup brown sugar
1 large garlic clove, crushed
4 Boneless pork chops, fat trimmed
Mix all ingredients in a measuring cup. Place pork chops in a plastic bag and pour marinade over them. Refrigerate until ready to grill.
One 8 oz can of pineapple tidbits
¾ cup diced mango
1/3 cup diced red bell pepper
3 Tbsp red onion, finely chopped
2 Tbsp cilantro, finely chopped
1 Tbsp fresh lime juice
¼ tsp ground ginger
Stir together adjusting flavors as desired. Chill until ready to serve.
Grill chops and serve salsa on the side.
